Perfect Turkey
Ingredients
1 18-lb. whole turkey, neck and giblets removed
2 C. kosher salt
1/2 C. butter, melted
2 lg. onions, peeled and chopped
4 carrots, peeled and chopped
4 stalks celery, chopped
2 sprigs fresh thyme
1 bay leaf

1 C. dry white wine
Directions
Rub the turkey inside and out with the kosher salt. Place the bird in a large stock pot, and cover with cold water. Place in the refrigerator, and allow the turkey to soak in the salt and water mixture 12 hours, or overnight. Preheat oven to 350 degrees. Thoroughly rinse the turkey, and discard the brine mixture. Brush the turkey with 1/2 the melted butter. Place breast side down on a roasting rack in a shallow roasting pan. Stuff the turkey cavity with 1 onion, 1/2 the carrots, 1/2 the celery, 1 sprig of thyme, and the bay leaf. Scatter the remaining vegetables and thyme around the bottom of the roasting pan, and cover with the white wine. Roast uncovered 3 1/2 to 4 hours in the preheated oven, until the internal temperature of the thigh reaches 180 degrees. Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with the remaining butter. Allow the bird to stand about 30 minutes before carving.

State Of the Union Address
Well, we are now turning the corner and getting into the late fall and early winter. It is the time of the year for change, from the leaves turning colors to the brisk feel of that early morning chill in the air. As a country we have a lot of change coming as well. The wars we are in will be redefined along with healthcare, home security, fiscal issues and many more. Sometimes it seems as though somebody hit a giant “reset button” on everything. I don’t know how it will all pan out but let’s keep working together and keep striving to do and be the best we can. Many of you will be traveling to visit family, friends and colleges over this Thanksgiving holiday. Hope you have a wonderful Thanksgiving and savor the food taste and smells, but most of all savor the love of all your family and friends.

What is considered legally blind?
You are legally blind when the best corrected central acuity is less than 20/200. You can have one eye that can see absolutely nothing, but if the other eye sees better than 20/200 you are not considered legally blind. This condition has to apply to BOTH eyes to be considered legally blind.
CAMP CREEK MEDICAL CENTER NEWS
As of December 1, 2009, Camp Creek’s Outpatient Imaging and Specialty Care office (Suite 104) will have an OPEN state of the art MRI imaging machine. It’s a 1.2 Tesla which means there is none other greater in strength that’s OPEN. What’s even more amazing is that it’s the ONLY ONE OF IT’S TYPE IN THE STATE OF GEORGIA. It gives the same detail as a closed MRI but without the feeling of claustrophobia associated with a closed scanner. Way to go Outpatient Imaging and Specialty care! Our medical community keeps progressing to the next level. Great for our Patients, Great for the Doctors!
DOCS EYE EDUCATION
This month we are featuring a rare disease that is inherited and appears to more common in persons with Asian ancestry called BIETTI’S CRYSTALLINE DYSTROPHY.
This disease is named for Dr. B. Bietti, an Italian ophthalmologist who described three patients with similar symptoms in 1937. In March of 2004, researchers at the National Eye Institute (NEI) identified the defective gene known as C4P4V2. This gene has a role in fatty acid and steroid metabolism.
Symptoms include crystals in the cornea (clear covering of the eye) and yellow shiny deposits on the retina. The retina becomes atrophied causing progressive night blindness and visual field constriction. Persons with BIETTI’s CRYSTALLINE DYSTROPHY have crystals of an unknown substance in their white blood cells that can be seen by using an electron microscope.
At this time there is no treatment. Extensive gene research will be helpful in finding a cure for persons with BCD. If you are having any vision problems and suspect you or someone you know may have this disease come and see Dr. Harris so he can conduct a comprehensive evaluation.

The holiday is an exciting time for family and friends. A time of sharing memories- old and new. A time of eating until one nearly passes out. With all of the holiday cheer in the air, it’s easy to overlook the ingredients in the foods. Ingredients such as salt, sugar, and fat, all leads to diseases such as high blood pressure, diabetes, strokes, heart disease, and cancer.
No, I’m not trying to rain on your holiday festivities; however, I do want to add a word of warning. The fact that we tend to overeat, overdrink, and under exercise during the holidays put our health at great risk. This is true, especially during the fall and winter holiday seasons of Thanksgiving, Christmas and New Years. When the holiday season ends, we’re 10, 15, and sometimes 20+ pounds heavier and physically miserable.
With this holiday season coming up, let’s have a plan in place- one that allows you to enjoy yourself and live to see the next one in good health. The following points will help:
Be on your guard for foods high in salt, extremely sweet, and smothered in fatty oils.
Eat in small quantities. Don’t stuff yourself.
Do not wait until you’re starving before eating.
Drink water before your meal, it can help prevent overheating.
Try planning your holiday meal before 3:00 p.m.
After the meal, take a 30-45 minute walk.
There is still help; however, if you happen to blow it. I recommend a seven- day cleansing systemic cleansing and Detox program. This is the safest and healthiest way to rid of the body of holiday bloat and stored waste, - and by the way, laxatives cannot cleanse or Detox the entire body. There must be an in- depth program used, one that’s designed to cleanse and purify the entire body.

Last Year Starr’s Mill High School invited Dr. Harris to do a talk for the Health and Occupational school club.
It was the students that voted him best speaker for last year. (It helps when you bring lots of visual aids to amuse the students.) Dr. Harris wants to continue to inspire. “If I can encourage one student to join the ranks of medicine, I have succeeded in my quest to educate one to choose to keep health and healthcare in the forefront of mankind”. Dr. Harris is being bought back by popular demand and will be appearing at Starr’s Mill High School in Peachtree City in November.
