FEAST FOR THE EYES

Crockpot Apple and Brown Sugar Corned Beef

The strong, salty taste of corned beef is well balanced out with apple, brown sugar, and milder ingredients.

Ingredients
1 corned beef brisket
1 quart apple juice
1 C. brown sugar
1 Tbs. prepared mustard
8 small red potatoes
2 medium carrots, pared and cut into chunks
1 onion, peeled and cut into eights
1/2 head cabbage, cut into chunks

Directions
Place all ingredients in large crock pot (cut meat in half if necessary). Stir to mix. Cook on high for 4 to 5 hours on high or 8 to 10 hours on low. Remove meat and vegetables and some of the cooking liquid. Slice meat thinly across the grain. Serve with the vegetables and some of the liquid. Use leftover corn beef the next day.....layer in crock pot with sauerkraut and Swiss cheese. Warm and serve on rye bread with 1000 Island dressing!!

State Of the Union Address
It has always been my belief that what goes down, must come up. In these unstable economic times we are currently involved in, we must attempt to reevaluate our priorities and decide what should take precedence in our lives. Sadly, my diagnosis on many of the past accounts is greed. My prognosis is for all of us to distinguish what is important in our daily lives and to scale down on what is not. One way is to choose NOT to participate in what is being termed a recession. Go back to the basics when you brown bagged your lunch and shopped for the best deals in food and clothing purchases. If you are unemployed, use your creative talents to establish a business. Maybe that dream you had about what you always wanted to do but never went after may be within reach. Use the internet as a handy search tool for your research. The prescription is to work at what makes you happy. If you find a job you love, you will NEVER work a day in your life! Be the BEST you can be at whatever you do and the financial reward will follow.

ASK OUR EYE GUY

Do Dogs get cataracts?
Contrary to popular belief, dogs are also affected by cataracts. Certain breeds have a tendency to develop cataracts at young ages. Afghan Hounds, Cocker Spaniels, German Shepherds, Golden Retrievers, Siberian Huskies, Labrador Retrievers, Old English Sheep Dogs, Poodles, Schnauzers, and Springer Spaniels can all develop cataracts. If you observe cloudiness or a crushed ice look in even one of your dogs’ pupils contact your vet immediately

KEEP YOUR EYE ON THE PRIZE

Everyone today knows the new word for expert ends in ista. For example, one who excels in the art of fashion would be considered a fashionista. Starbucks calls their employees baristas. We decided to help our patients become RECESSIONISTAS by sharing simple tips on budgeting without feeling the pinch in your pockets.
  • Recycle your Starbuck’s cup and make a low fat, coffee or tea by brewing your own and adding your own low fat cream and cinnamon at home.
  • The Dollar and Family General stores sell name brand toiletries and great food items. Check there for savings on those items.
  • Good time to spring clean and clear out clothing closets and items not in use. Donate them to your local charity. Make sure they are in good condition and ask for a receipt for taxes.
  • Make your birthday and anniversary gifts. Hobby Lobby can bring out the creative talents we all possess. Earrings, hats, pictures, tie clips, table cloths and matching napkins, wall hangings etc
  • Use your cell phone for all long distance calls
  • Route your errands in a circle to save on gas. Speeding uses major gas
  • To clean your windows use 1 part vinegar and 2 parts water and wipe your mirrors and windows with newspaper. It is better and cheaper than Windex.
If you consider yourself a recessionista and want to share some of your tips, please forward them to Karend@premiereyephysicians.com to share with other patients.
