Crock Pot Full of Pot Roast
When I make this, the beef literally falls off the bone. The bones and the ingredients in this roast make a rich broth, a thickener really isn't necessary.
Ingredients
4 lg. carrots, cut in half
4 stalks celery, cut in half
1 lg. red onion, quartered
2 sprigs fresh rosemary
1 sprig fresh thyme
1 garlic bulb, slice top off
1 scallion, peeled and chopped
1 stick butter, cut 1-inch thick pieces
4 lb. 7-bone beef roast
2 Tbs. kosher salt
2 Tbs. freshly ground black pepper
1 C. beef broth
2 Tbs. Worcestershire sauce
1/2 C. red wine
1 lb. yukon small gold potatoes, scrubbed, skins on and cut in half
Directions
Place carrots, celery, onions, rosemary, thyme, garlic bulb and scallion in bottom of 6-qt. crock pot. Scatter butter over the vegetables. Salt and pepper the beef roast on both sides. Lay on top of vegetables. Mix broth, Worcestershire sauce and red wine together. Then pour mixture over ingredients in crock pot. Cook on low for 6 hours. Add potatoes to crock pot and cook on high an additional 2 hours. Carefully remove roast. It will probably be so tender it falls off the bone. Remove vegetables and keep all warm. Discard the sprigs of rosemary, thyme and garlic. Strain juice and make gravy if desired. Make a rough and mix into the boiling broth, stir until thickened.

State Of the Union Address
Being a sports enthusiast myself, I enjoy exposing my children to year round global sports such as skiing, track, basketball, football, golf, tennis you name it. When the Olympics come on, summer or winter, I especially enjoy watching the best of the best compete all around the world. As a family, the true essence of a bonding experience begins as we enjoy viewing the sights and sounds of the city hosting the Olympics for that year.
In 2014, Sochi, Russia will host the Winter Olympic Games and once again we’ll be tuned in to couple our love for sports with our geographical inquisitiveness. The emphasis is not whether you win or lose, but really how you play the game. A valued lesson to apply in life as well. The United States, Spain, Italy, Greece, Canada, Beijing, soon England and once again Russia (they hosted the summer Olympics in Moscow, 1980), along with other countries throughout the years, have opened their windows to the world and educated us on their country and culture. As a nation and especially in this internet age, we must realize that it is essential that we teach our young people to think GLOBALLY. Observe and study a variety of cultures and customs, travel and by all means learn to embrace people of ALL cultures and respect their customs. As Shakespeare once said, “The whole world is a stage and everybody plays a part”.

ASK OUR EYE GUY
Why does chopping onions cause your eyes to burn?
When you cut onions they release a gas called syn-propanethial-s-oxide that becomes sulfurenic acid when it interacts with your eyes which then turns into a gas. The nerve endings in your eyes pick up on the irritation and reacts by telling your brain to produce more water to dilute the irritation.
