FEAST FOR THE EYES

Zucchini Crab Cakes

Next time you make some crab cakes, I recommend trying my simple and delicious recipe. The secret to these is the grated zucchini and get this....there is no real crab in this recipe. All the ingredients mixed together taste like crab. So if you are a vegetarian, these are great for a meal.

Ingredients
1 egg
1 1/2 tsp. Old Bay seasoning
1 Tbs. onion flakes
2 Tbs. melted butter
2 1/2 C. grated peeled zucchini
1 C. plain breadcrumbs
1/2 C. flour
Oil for frying

Directions
Combine egg, seasoning, onion flakes, butter, and zucchini. Stir in breadcrumbs. Shape into cakes and roll in flour.

Fry in oil until golden brown on both sides. Serve with cocktail sauce or tartar sauce if you like.

 


State Of the Union Address 

A couple of months ago, I started the dreaded project of cleaning out the garage. My intent was to rid myself of all useless items thus making room for the new. As I carefully inspected the old Nintendo games, children’s golf clubs, paint that I would never use, even toys that I guess I was saving for nostalgia purposes, you name it, I began to get a little overwhelmed. Suddenly, my trash transformed into timeless treasures. Memories of yesteryear! My painter came by and really made me think about life. He began to pan through the items as though they were treasures. I relented and gave him most of the items knowing how much he would appreciate them. Sometimes in life, we view people in a different light if they dress a little shabbily, if they can’t speak as well as we do, if they are elderly and may not be able to be as mobile and healthy as we’d like them to be, people may not be as smart as we’d like them to be but, always remember to “Always find Treasure even in Trash”. To put it another way, my mother always said, “What’s one man’s trash is another man’s treasure.” Think about it, a trash man gets to know every person on their route through their trash. Elderly people and pets have an unconditional love of life and are always full of infinite wisdom. Wisdom is after all an asset and if you can pass it on, the gift is always in the giving.

What causes dark circles under your eyes?
Dark circles are most often caused by allergies, lack of sleep, illness or are hereditary. If eating a balanced diet, sleeping regularly and reducing caffeine doesn’t help, use a concealer that is 1-2 shades lighter than your foundation for a quick fix. If that does not help, contact Dr.Harris as the problem may be within the eye.

Pterygium

Many of my patients have lived with this tissue growth over the eye for a number of years assuming it was a birth mark and that there was no medical treatment for this. What exactly are PTERYGIA?

PTERYGIA are wedge or wing shaped growths of benign fibrous tissue with blood vessels (fibrovascular) located on the surface of the sclera. In severe cases, PTERYGIA may grow onto the eye’s cornea and interfere with vision.

Signs and Symptoms-Many people with PTERYGIA do not experience signs or symptoms or even require treatment. On occasions, PTERYGIA may become swollen and give one the feeling that there is a foreign body in the eye.

Treatment depends on the size and the symptoms it causes. Dr. Harris may prescribe a mild steroid or surgical removal may be necessary.

If surgery it required, it will last approximately 30 minutes. You will be required to wear a patch and know that you can return to work within a few days.

Unfortunately, PTERYGIA return at a 3% and 40% rate of recurrence. There are two ways to prevent regrowth. One is called autologous conjunctival autografting where the surgeon may suture or glue a piece of surface eye tissue onto the affected area.

There is also a drug that slows the metabolic processes contributing to tissue growth called mitrocmycin that your ophthalmologist may use. Steroid drops may be recommended for several weeks to decrease the swelling and prevent regrowth.
