Palak Paneer
One of my favorite dishes is Indian cuisine, this is made with spinach and paneer, a mild Indian cheese. You can make your own paneer or find it in gourmet groceries or any Indian market. Ghee is simply clarified butter, which you can also make yourself or buy ready-made.
Ingredients
2 5 oz. bags baby spinach
1 large onion
1/4 tsp. cinnamon
1/4 tsp. ground cardamom
1 tsp. ground ginger
1/2 tsp. chopped garlic
1/2 C. chopped tomatoes
3 Tbs. plain yogurt
1 Tbs. coriander
1/2 tsp. garam masala
1/2 tsp. paprika
1/2 tsp. salt
8 oz. paneer cheese, cut into cubes
1/4 C. heavy cream
Directions
Cut spinach into shreds and cook in 3 Tbs. water until tender remove from heat. Sauté onion, cinnamon, cardamom, and ginger in 12 tbsp. ghee or oil until onion is translucent. Then add garlic and chopped tomatoes, and reduce heat. Cook this briefly and slowly blend in yogurt a little at a time to prevent curdling. Add coriander, garam masala, paprika, and salt, mixing well.
Add cooked spinach with liquid, cover and simmer on low heat for approximately 20-30 minutes. Remove from heat. Take half of spinach mixture and puree in food processor or blender, and return to mixture and stir. Slowly stir in heavy cream, and heat through on low heat, then add paneer cubes and serve.

State Of the Union Address
People interpret the word TIME to incorporate it’s definition into their personal life endeavors. Whose side is TIME really on? How are you living?
Congress, the Senate and the media judge the performance of our President by having to solve the world’s problems in the first 100 days of his term. In the last 100 days, he’s had to deal with war on drugs over the Mexican border, developing a stimulus package, bailout the banks and car companies, convene with our European neighbors to discuss issues on worldwide finance specifics, determine how and when to bring the troops home from the war in Iraq and on a lighter note, choose the right canine breed as the family pet. Just thinking about this can exhaust the average individual. WHEEW!!!
The average TIME I spend on most of my surgical cases is 20 minutes, however, keep in mind that it took 18 years of education to do just that. Minimum time that I prescribe for recovery is 24 hours, however, with most surgeries one should take into account that rest and relaxation is key and that recovery time can vary from patient to patient and nonetheless surgical procedure to surgical procedure.
We place so much emphasis on HOW MUCH we can do in such a short period of TIME. My philosophy on TIME and life is to accentuate on the QUALITY of WHAT YOU’VE DONE in whatever time frame appropriately tailored in YOUR LIFE.
From the moment we are born until our departure from this earth, we are on the clock so to speak. Keep in mind that it’s not the dates of your life; it is the dash between the dates that represent the legacy that you leave behind.
Live everyday as though the clock and calendar were tools to help you navigate thru your QUALITY of days in your life and not quantity of days of your life.
To all of our Veterans, and service personnel presently at war; once again may we take the opportunity to THANK YOU for your TIME and service in improving the quality of life for all of your fellowman, not just on Memorial Day, but every day.

Is hypnosis done only with your eyes closed?
Many patients who are deaf but can see, desire hypnosis for many reasons. These can include weight loss, smoking, overcoming fears and other issues. This is what is termed as an EYE-OPEN hypnosis. In fact, one of the most renowned schools for the blind, Gallaudet University in Washington, D.C., offers a Clinical Psychology PHD., program in hypnosis for the students enrolled at Gallaudet.
DOC'S EYE EDUCATION
To educate our savvy readers in this issue we have decided to discuss a diseases known as OPTIC NEURITIS.
Whenever you see the suffix itis in a disease you know it’s an inflammation of some type. In this case it would be an inflammation of the optic nerve. These are the nerve fibers that connect your eyes to your brain. The nerve is covered by a fatty material called myelin that acts as insulation. Think of it as the plastic around your cable wire that connects to your television. When the body’s immune system attacks this tissue, it is postulated that OPTIC NEURITIS develops.
There are several symptoms that may indicate a possibility that you may have OPTIC NEURITIS, however, the most common symptom is pain upon moving the eye. Symptoms increase when body temperatures increases such as when in a warm shower. This is referred to as “Uthoff’s syndrome. Vision loss can vary from minimal to total loss of vision.
What causes OPTIC NEURITIS? It can be caused by the several other diseases such as mumps, measles or even a common cold. The condition is closely related to Multiple Sclerosis. Almost half of all Multiple Sclerosis patients will develop OPTIC NEURITIS at some time in their lifespan. Bacterial infections may also play a role in aligning itself with OPTIC NEURITIS such as Syphilis, Lyme disease, Herpes, Hepatitis B, Sarcoidosis and Cranial Arteritis.
Signs of the disease that Dr. Harris looks for are a swollen or elevated optic nerve head. Debris cells or fluid from your immune system may be present on your retina. You may notice a difference in the way your pupils react to the light. Your visual acuity may be reduced and perhaps you may notice blind spots or a dim area in your field of vision.
If you have any of the above symptoms it is imperative that you come in to have a complete eye examination with Dr. Harris.
